Banana Coconut Walnut Bread

Banana Bread is a cake-like bread made with mashed fully ripe bananas. I missed this kind of bread / cake back home in Pinas.  Out of necessity, I tried to make one and at this time, I added coconut flakes & chopped walnuts.  It turned out moist, sweet, crunchy on top, & of course yummy.  My hubby loves it. I call it "Banana Coconut Walnut Bread".

Ingredients:
1 & 1/2  cups all purpose flour
1 tsp baking soda
1/2 tsp salt ( I used sea salt or whatever your preference is fine)
3/4 cup  brown sugar, pressed (I prefer brown than white)
1/2 cup coconut flakes in a pouch
2 raw eggs
1 & 3/4 cups bananas, mashed
1/4 cup (i.e. 4 tbsp) butter, melted for 15 minutes in a microwave
2 tbsp molasses (optional. just increase the brown sugar by 1/4 cup to make it 1 cup. see above list)
1/4 cup milk
1 tsp pure vanilla extract
1/3 cup walnuts, chopped (for topping)

Procedures:

Dry Ingrredients Mixture
1.)  In a mixing bowl, stir all dry ingredients i.e. flour, baking soda, salt, sugar, & coconut flakes until well combined; set aside.


To Stir - means to use a spoon, whisk, or beater to move ingredients around in a circular motion. Stirring is a more gentle form of beating. 

To Beat- means to thoroughly combine ingredients and incorporate air with a rapid, circular motion. This may be done with a wooden spoon, wire whisk, rotary eggbeater, electric mixer or food processor.

2.)  In another mixing bowl, beat the eggs, banana, butter, molasses, milk, & vanilla.  Stir into dry ingredients just until moistened.


"Stir into dry ingredient just until moistened" - means the recipe just means they don't want you to over mix. This is because over mixing a dough or batter causes gluten production which can cause the baked good to be tough. And yes, you use all the wet ingredients.  (Thanks to yahoo.answers.com)

3.) Pour into a loaf pan coated with cooking spray.  Sprinkle walnuts over batter.
 
4.) Bake at 350 degrees F for 50 to 55 minutes or until a toothpick inserted near the center comes out clean.  Let it cool for about 10 minutes before removing from pan. Transfer to a serving dish & slice.

Ginataang Puso ng Saging aka Banana Blossom in Coconut Cream

Ginataang Puso ng Saging or simply called Banana Blossom Cooked in Coconut Cream, my own version. 

It has been decades ago the last time I've eaten this kind of dish. I'm glad I found a fresh banana blossom in the International Market, and so I decided to make a dish out of it, Ilonggo / Pinoy style.
 Ingredients:
  • 2 cups banana blossoms (puso ng saging), cleaned & chopped
  • 2 cups ground pork
  • 1/3 cup coconut cream (or coconut milk will do)
  • 1 medium onion, sliced
  • 1 tbsp garlic, minced
  • 1 1/2 tbsp vinegar (I used Datu Puti from Pinas)
  • 1 tbsp oyster sauce (or soy sauce will do)
  • 1/2 teaspoon ground black pepper
  • 1/2 cup bell peppers (orange & yellow)
  • 1/2 tbsp Chili sauce (in the absence of green chili or banana pepper)
  • 1/4 cup Cilantro, chopped
  • 1 tsp salt
  • 1 tbsp cooking oil (its because I used Ninja Cooker, less fat or oil is needed)
Cooking Procedure:
  1. Heat a pan and pour-in cooking oil.
  2. Saute garlic, onion. 
  3. When the onion becomes soft or transparent, add the banana blossoms. Cook for 2 minutes.
  4. Add vinegar and long green chili. Let boil.
  5. Pour in the coconut milk. Let it boil, and then simmer until the liquid reduces.
  6. Add salt and pepper to taste.
  7. Turn the heat off, and then transfer the cooked banana blossoms on a serving plate.
  8. Serve with steamed rice. Share and enjoy!
